Pinterest…what a wonderful tool!

If you haven’t tried Pinterest, you are totally missing out! Pinterest is not only AMAZING for boosting you business, but the inspiration on there is simply unbelievable!

How many people pin craft ideas, recipes and projects but never really “test” them out? I’m sure many! This week I vowed to test out my Dinner Ideas I Love board and Yummy Treats My Kids Will Love .

With me being sick for almost 7 weeks, our family got trapped into a rut of take out and the same ‘ol easy cooking. I’m the type of gal who has to have a variety when it come to food! And did I mention that I LOVE yummy food! I always tell my husband that I should be a food critic in my next life. ;)

Which led me to this project of using my Pinterest Boads for our meals.

My husband works late usually 2-3 nights a week, so I was looking for recipes that I could easily make without taking too much time away from my girls.

My first recipe was this oh so delish roasted red pepper, chicken and penne pasta from Menu Musings of a Modern American Mom.

This was my first dinner recipe that I pinned. It had me at roasted red peppers and penne!

Not only was this recipe super easy to make in the food processor, but it really was FANTASTIC! The only thing that I would change next time would buy 2 rotisserie chickens since this can serve enough for company.

Next up was this super yummy crockpot chicken recipe via My Daily Moment.

This was sensational and again oh so simple to make. I used about 2 lbs of chicken breast instead of 3 (three just seemed like too much) and instead of chopping up the chicken before putting them into the crockpot, I placed them in whole. I love when you cook chicken in the crockpot for about 5-6 hours how it shreads so finely (which is a great way to make barbecue chicken sandwiches).

This recipe again was yummy as made; however the noodles soak up most of the creaminess of the sauce (which was my favorite part). Next time I make this I have to add more chicken broth, cream or omit some of the pasta to keep the creamy texture from becoming too thick.

And for dessert this week I had to try making these Mounds Brownies from In Katrina’s Kitchen.

If you are on Pinterest I’m sure you have seen this photo floating around. My husband LOVES Mounds and Almond Joys. They are the only candy he will eat when Halloween comes rolling around.

Again, this was another simple to do recipe. I use a dark chocolate brownie mix because my family loves dark chocolate and I thought it would be a nice contrast with the milk chocolate frosting. I couldn’t find unsweetend coconut flakes, so I used 2 bags of sweetend coconut and cut back on the amount of powdered sugar by about half a cup, and they turned out dreamy. I had my doubts about how the chocolate frosting would set up and it turned out perfectly.

These are a bit rich, with all the sweetness going on, so I was satisfied with a small piece (and happy to have Jamie take them to work to keep me from eating the entire pan).

That was my week of testing out my Pinterest Boards and I am super excited to try this again next week with more recipes. I had so much fun cooking new foods for our family. I think we all get stuck in a rut of the same ‘ol  dinners every week, so this made dinner time more exciting.
